I was wondering what kind of space is available for aftermarket oil pans in 22 classics. Specifically what kind of oil pan depth can you have without bumping into the hull?

There's a good bit of room under a stock pan.
Here's a picture of my old Minx (same major dimensions, just 2' shorter) under the pan.
You can see the bilge pump and switch, the pan drain line, the transom plug, and an oil cooler on the port stringer.
As you can see, there's also lots of room for a wider, rather than deeper pan.

So a pan 8" deep, thats widened a bit to clear a 4.5 stroke, and a kick out should clear everything fine then?

I would think so.

There is a post floating around from a fellow that was selling a pretty radical 383 he pulled out of his 22, he had a humongous square bottom pan which I think was 10-12 qts.

I use a Gill 14 qt. pan on my 22. I don't off-hand remember the dimensions but the pan is deep with kick-outs...plenty of room.

Have this 8 Qt. in my 16. I would hope it would fit a 22. Dimensions included.

I have a stock Merc 8 qt pan out in the garage but run a 5 qt on my baby stroker, I change oil so frequently (20 hours) that a big pan is a waste in my case.
