The oil filter cap is a good place.
My engine has one of those wonderful cast aluminum pans that has two plugs, one on each side......
One side gets a drain hose, the other gets the oil temp sender.

Different motor (I Had a Smallblcok 408) but I put one sender in the pan, then I tapped one of the bosses next to the Oil filter where oil was going Into the block after the oil cooler. I Had both senders hooked to a toggle switch and with the flip of the switch I could see how well my Oil Cooler was working without needing another gauge. Make any sense????

I think it's very important to direct read the bath water...
I have a sender in the Merc remote filter head, came stock.

The best place for it is the oil pan,if your not using the drain plug and can adapt to it thats where i would put it..
