Folks, I need a recipe for great crabcakes. I want them a bit spicy, I am using Dungeness (sp) CRAB. I have never made them before.

Simple is better.

I need 'em for Saturday night.

:)

I figure the Gulf folks would have a handle on this

Thanks

Lenny, ya take crab and put it in a cake, end of story........

I will email you my mum's receipt, she only used Dungeness and the cakes were "slightly" spicy but not over the top........... I seemed to remember her using some Panko crumbs....

There are a variety of ways to make crab cakes, and they're all damn good.

So, simple and spicy:

1 Lb. crab meat
1 large egg (beaten)
1 tablespoon mayo
1 tablespoon dijon mustard
1 tablespoon Old Bay seasoning - add more to taste
1 squirt Tabasco sauce
1 slice white bread / no crust and torn into small pieces
- or use 1 cup seasoned bread crumbs instead.

Blend it all together, pat 'em into burgers about 1" thick.

saute' in light olive oil or broil until lightly brown
- a little tartar sauce and cole slaw goes good -

There are more than a few ways to do it, but this is easy.

I'm no chef by any means, but Old Bay sells a mix that is pretty damn good. Not too spicy by itself, but just add a little extra Old Bay to taste for extra spice. Never made it with Dungeness. Only fresh blues from the bay.

If you want some real MD crab cakes, these are the only ones I'll eat that aren't homemade. You can order them uncooked.

Thats not too far off the Old Bay recipe. Its just in a ready mix for us "non-kitchen" type.

About 5pm Pacific time Mike, so leave your watch alone and get here by 8 :D

I have a ton of Old Bay. I buy it everytime I go to the states. :)

A dungeness crab is just a blue crab on steroids. :)

We used to catch them in Oregon. You can buy them frozen at Winn Dixie in Florida.
