I have a '99 Z22 with 5.7L efi and a 21' pitch prop. AT WOT I am running about 61 mph at 5100 RPM. Is that too many RPM's to be turning? Should I try a 23' pitch prop to lower my RPM's?

Yup I would go to the 23, you might get a tiny bit more speed. I would use the 21 for sking.

I just tried one of the new Mirage Plus 21 props over the weekend on my 18 classic and discovered that the new prop out of the box ran about 300 rpm slower than the Mirage Plus 21 demo prop that was in the prop shop. The newest props out of the factory apparently have a lot more cup than in the last year or so. You may want to try one to lower your rpm just a little

What does the tag on the engine say for an RPM range? That will tell you if you are too high.

Next time I am out I will check the motor tag.

Does anyone have an online place to get SS props?

The last place I bought one, (The Prop Shop), I thought I was getting a new one. I opened the beat up box and pulled out a rusted, used SS prop.
