All right Smokey Grill Guys, I just bought an offset firebox smoker, I seasoned it last night, and I need an easy foolproof battle plan for some food for Sunday.
Chicken, a hunk of beef and some hickory (currently available as 1x8 stock at $6.00/foot, I know, I'll source some cheaper stuff over the winter)

Help me out.

Well since Poodle sent Ernesto this way I decided to "gas" the bbq smoker this weekend, and I grabbed a commercial grill from my buddy's grocery store.
6 burners, 2 tanks, and all kinds of grill space. I used 2 burners, and a cast iron smoke chamber, I also threw a couple of hickory planks on the burners and some apple chips near the end to finish.
Carl, thanks for the tips, I was looking more for bbq stuff, than smoking stuff, but I am a big fan of smoked venison.

Trip it was good talking to you on Friday, I hope the drive went well.

It's been a tough summer, those aren't quail, they're pigeons....... :D :D
