Thermostat?

I just bought a 1969 Sweet 16. Nice cosmetic retoration but I'm sorting out a few mechanical things. There currently is not a thermostat on the motor, a Ford Holman Moody Cobra 302. Should there be a thermostat and if so, what temp. should I run? Thanks all for your help.

Yes the engine will run much better at a decent operating temp, I ran 162 degree in my 302.
