saw mi. outdoors or something like that today. they were ice fishing for smelt. i usually go beer dipping, i mean smelt drinking, i mean,,,,nevermind.
anyways, they scaled them, cut heads off, gut them. so you have a "butterfly" filet, sqeeze a lemon over the whole plate of them. then he took about 4 of them at once and wrpped them in a big piece of bacon and put them on the grill. i'm telling you this looked so good, and these guys were going nuts over them! never knew any other way besides deep fry but,,,there ya go!
